Arroz con Carne

Serves 8
Ingredients
- 3 tbsp Vegetable oil
- 1 cup White onion, sliced
- 1 tbsp Garlic cloves, minced
- 1 tbsp Mexican oregano
- 1 lb Beef skirt steak for fajitas, diced or cut up into smaller pieces
- 2 cups Basmati rice
- 3 cups Unsalted beef broth
- 1/2 cup Fresh cilantro, roughly chopped
Instructions
- In a large Dutch oven set over medium-high heat, add oil, and allow to get hot.
- Add onions, garlic and oregano and stir-fry until translucent.
- Add beef fajitas and stir-fry an additional 3 to 4 minutes.
- Add rice and continue to stir-fry an additional 4 to 5 minutes or until rice just starts to lightly toast.
- Pour in beef broth, bring to a rapid boil then reduce heat to low and cover.
- Cook 20 to 30 minutes or until all the liquid is absorbed and rice is cooked through.
- Season to taste as needed and garnish with fresh cilantro before serving.
