Apple Compote with Gluten Free Pretzel Almond Streusel

Ingredients

  • 4 tbsp Coconut oil
  • 6 Apples, peeled cored and chopped small
  • 1 tbsp Fresh lemon juice, juiced
  • 1 tsp Lemon, zested
  • 1/2 cup Brown sugar, divided use
  • 1/4 cup Maple syrup
  • 1 tsp Ground cinnamon
  • 1/2 tsp Allspice
  • 1 Gluten free pretzels
  • 1 cup Almond flour
  • 1/2 cup Pecans, crushed
  • 1 Dried vanilla bean

Instructions

  1. Preheat oven to 375°F.
  2. In a large skillet heat half of coconut oil. Add in apples, lemon juice, and lemon zest, half of brown sugar, maple syrup, and spices. Cook until tender and sauce is thickened. (about 15-20 minutes.) Fill individual ramekins or a baking dish with cooked apple mixture.
  3. In a food processor, combine other half of the coconut oil, pretzels, almond flour, pecans, and scraped vanilla beans, pulse until smooth. Top the apple compote with the pretzel topping. Bake for 30 minutes until topping has browned and is crisp.
