Apple and Gouda Stuffed Chicken Breast

Serves 4

Ingredients

  • 1 lb Boneless skinless chicken breasts, about four 4 oz. breasts
  • 1 tbsp Extra virgin olive oil
  • 1/2 tsp Salt
  • 1/2 tsp Pure ground black pepper
  • 1 tsp Fresh thyme, chopped
  • 1 Fresh fuji apple(s), sliced
  • 4 oz Shredded gouda, shredded

Instructions

  1. Preheat oven to 400°F. Line a sheet pan with foil and set aside.
  2. Using a sharp knife, carefully cut a pocket into each breast.
  3. Brush outside of chicken with oil and season with salt, pepper, and thyme.
  4. Stuff each breast with apple slices and shredded Gouda.
  5. Transfer to baking sheet. Place in oven and bake for 20 minutes or until chicken is cooked through.
  6. Serve immediately with your favorite sides.
