Ancient Grain & Chicken Soup

Ingredients

  • 1 tbsp Olive oil
  • 4 Links spinach and feta chicken sausage
  • 2 Carrots, cut into 2 pieces
  • 1/2 cup White onion, sliced
  • 3 Garlic cloves, chopped
  • 32 oz Reduced sodium chicken broth
  • 1/2 cup Quick cook grains
  • 5 oz Salad mix
  • 1 tsp Ground black pepper

Instructions

  1. Place a large stock pot over medium heat.
  2. Add olive oil and chicken sausage, and cook until sausage is browned.
  3. Stir in carrots, onions, and garlic. Cook until onions begin to brown slightly.
  4. Add chicken broth, 5 Grains, and super greens. Cook for 15 minutes or until grains are cooked through. Season with pepper.
  5. Serve in a large soup bowl.
