Ancho Caesar Salad with Rosemary Sourdough Crumbs

Ingredients
- 6 oz Bakery rosemary golden grain sourdough bread, approximately 4 slices
- 1 Large pasteurized egg yolk, white discarded
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 3 Large peeled garlic cloves, crushed
- 1 1/2 tsp Ancho chili powder
- 1/4 cup Cold water
- 1/2 cup Parmesan fresh grated cheese, divided use
- 1 1/4 cups Grapeseed oil
- 12 oz Romaine hearts, 4 mini heads, roughly chopped
Instructions
- Preheat oven to 350ºF.
- Lay bread slices on a sheet pan lined with parchment paper. Bake until bread is almost burnt in color, approximately 25 to 35 minutes. Remove from oven and cool.
- Place cooled bread in a 1 gallon resealable bag and crush into panko-sized crumbs. Pour into a bowl and set aside.
- In a blender add egg yolk, mustard, Worcestershire sauce, garlic, ancho chili powder and water. Blend until smooth.
- With blender running, add 1/4 cup of Parmesan cheese and slowly add oil in a thin stream until dressing is emulsified and thick. Season to taste with salt and lots of black pepper.
- To serve, place romaine into a bowl, add remaining Parmesan cheese, a little dressing and sourdough crumbs.
- Toss to coat leaves well and serve.
