Almond Parmesan Crusted Chicken

Ingredients

  • 1 1/2 cups Whole almonds, finely chopped
  • 1 cup Liquid egg
  • 1/2 cup Shredded Parmesan cheese
  • 4 Boneless, skinless chicken breasts
  • 1/8 tsp Kosher salt
  • 1/2 tbsp Butter flavor no-stick cooking spray
  • 1 tbsp Chicken fajita spice blend
  • 1/8 tsp Ground black pepper

Instructions

  1. Preheat oven to 375°F.
  2. Prepare baking sheet with non-stick cooking spray. Set aside.
  3. Create a dredging station with a shallow bowl with real egg and a second shallow bowl with a mixture of almonds, cheese and fajita seasoning.
  4. Take one chicken breast at a time and coat in egg and then dredge in almond mixture; coat evenly and place on baking sheet.
  5. Bake 20 minutes or until juices run clear.
  6. Season with salt and pepper.
