Al Pastor Sloppy Joe

Ingredients
- 2 tbsp Vegetable oil
- 1 1/2 lb Mi Tienda Carne al Pastor
- 2 Large fresh jalapeño peppers, stems removed, seeded and thinly sliced
- 1 cup Fresh pineapple, roughly chopped
- 6 Hamburger buns, plus more as needed
Instructions
- In a large Dutch oven or pot add oil, allow to get hot, add al pastor and stir-fry for 10 to 15 minutes or until pork just starts to nicely brown.
- Add jalapeños, and pineapple continue to cook until everything is nicely incorporated and fully cooked. Approximately 10 to 12 minutes.
- Serve al pastor mixture on hamburger buns, along with your favorite condiments. Repeat process with each additional sloppy joe.
- Chef's Note: If you prefer, you can leave pineapple slices whole and place them on the pastor mixture when assembling the sloppy joe for prettier presentation.
