  • 10 oz Power slaw
  • 8 oz Pineapple tidbits, (or chopped fresh pineapple)
  • 2 tsp Honey
  • 1 tbsp Grapeseed oil
  • 1/2 tsp Kosher salt
  • 1/4 cup Green onions, finely chopped
  • 12 Lettuce scoops, (can also use butter lettuce leaves)
  • 1/4 cup Fresh cilantro, leaves only, finely chopped
  • 1/2 cup Crema Mexicana
  • 1 tsp Limes, zest

Instructions

  1. Heat a skillet on medium-high.
  2. Add oil and al pastor meat to pan and break apart chunks as it cooks. Sear well, stirring occasionally, for 12 to 15 minutes or until meat is fully cooked.
  3. While meat is cooking, drain pineapple and add to a medium-size bowl. Add power slaw and green onions to bowl, and stir to combine. Set aside.
  4. In a small bowl, whisk together Mexican cream, lime zest, salt and honey. Set aside briefly.
  5. Stir pineapple mixture into hot pan for the last minute the meat cooks. Remove from heat.
  6. To serve, spoon meat into lettuce scoops and top with crema and cilantro.
  7. Chef's Note: Garnish with chopped avocado if desired.
