Air Fryer Rotisserie Roasted Hasselback Potatoes

Serves 4

Ingredients

  • 4 Medium russet potatoes
  • 2 oz Salted butter, room temperature
  • 1 tsp Kosher salt

Instructions

  1. Scrub potatoes well and thread a skewer lengthwise through the middle of each potato.
  2. Hold a paring knife diagonally and rotate knife through potato and around skewer from one end to the other to create a continuous corkscrew cut.
  3. Gently pull apart layers of potato on each skewer, rub with butter and work it into cut layers. Rub any remaining butter on the outside of potatoes to coat evenly, then sprinkle with salt.
  4. Cook for 40 minutes on 400ºF or until potatoes are tender in the middle and nicely browned on the outside. Serve with additional butter as desired.
