Air Fryer Lobster Thermidor

Serves 2
Ingredients
- 1 lb Lobster tail, shell split in 2, meat removed, rough chopped, reserve shells
- 2 tbsp Chopped celery and onion
- 1 tbsp Italian parsley, finely chopped
- 1 tsp Fresh lemon juice
- 1/3 cup Mayonnaise
- 1 1/2 tsp Old Bay Seasoning
- 1 Medium fresh garlic clove, minced
- 1 tsp Dijon mustard
- 1 tbsp Panko bread crumbs
- 2 tbsp Unsalted butter, melted
Instructions
- In a large bowl, combine lobster meat, celery and onion mix, parsley, lemon juice, mayonnaise, Old Bay, garlic, and Dijon mustard. Mix to combine and set aside.
- Mix 2 cups of kosher salt with 2 to 3 tablespoons of water to reach the consistency of wet sand. Place in middle of air fryer's black tray and set aside.
- Spoon lobster mixture into lobster shells and place into wet salt so shells sit upright. Top with panko and drizzle with melted butter.
- Place in air fryer, set on fish cycle and cook 18 minutes. Remove shells from tray and brush off salt. Serve.
