Air Fryer Lobster Thermidor

Serves 2

Ingredients

  • 1 lb Lobster tail, shell split in 2, meat removed, rough chopped, reserve shells
  • 2 tbsp Chopped celery and onion
  • 1 tbsp Italian parsley, finely chopped
  • 1 tsp Fresh lemon juice
  • 1/3 cup Mayonnaise
  • 1 1/2 tsp Old Bay Seasoning
  • 1 Medium fresh garlic clove, minced
  • 1 tsp Dijon mustard
  • 1 tbsp Panko bread crumbs
  • 2 tbsp Unsalted butter, melted

Instructions

  1. In a large bowl, combine lobster meat, celery and onion mix, parsley, lemon juice, mayonnaise, Old Bay, garlic, and Dijon mustard. Mix to combine and set aside.
  2. Mix 2 cups of kosher salt with 2 to 3 tablespoons of water to reach the consistency of wet sand. Place in middle of air fryer's black tray and set aside.
  3. Spoon lobster mixture into lobster shells and place into wet salt so shells sit upright. Top with panko and drizzle with melted butter.
  4. Place in air fryer, set on fish cycle and cook 18 minutes. Remove shells from tray and brush off salt. Serve.
