Air Fryer Homemade Eggplant Parmesan

Ingredients

  • 8 Large eggs
  • 1/3 cup Water
  • 2 1/2 cups Italian panko bread crumbs, plus more as needed for dredging
  • 1 Medium purple eggplant, top trimmed, eggplant peeled and sliced into 1/4 inch rounds
  • 5 3/4 qt Air Fryer
  • 24.3 oz Marinara sauce
  • 1 cup Fresh Grated Parmesan Cheese
  • 2 cups Thick shredded mozzarella cheese

Instructions

  1. Set up a breading station. Whisk together eggs and water in a shallow pan. Place bread crumbs in another shallow pan.
  2. Dredge eggplant in egg mixture then in bread crumbs, pressing eggplant firmly into bread crumbs to get them to adhere properly.
  3. When all the eggplant has been coated, arrange in air fryer as best as possible.
  4. Cook at 400°F for 30 minutes, opening air fryer halfway through to move pieces around to brown evenly. When eggplant is done, remove from fryer and allow to cool slightly.
  5. Place a little marinara sauce in the bottom of an 8" x 8" baking dish.
  6. Add a layer of eggplant on top of sauce then repeat with more sauce followed by more eggplant slices. Repeat layers, using all of the eggplant and finishing with sauce on top.
  7. Cover evenly with Parmesan and mozzarella cheese. Bake in air fryer for 10 to 12 minutes or until cheese is melted and browned. Cool before cutting.
  8. Chef’s Note: This recipe works great with any size air fryer but cook time will vary based on machine size.
