Agave Chicken with Black Beans & Onions

Serves 6

Ingredients

  • 2 tbsp Canola oil
  • 1 1/2 lb Boneless skinless chicken breasts
  • 1/4 tsp Kosher salt
  • 1/4 tsp Ground black pepper
  • 1 Small white onion, chopped
  • 1/4 cup Light agave nectar
  • 20 oz Black beans, rinsed, drained, and heated

Instructions

  1. Bring a medium sauté pan to medium-high heat, add oil.
  2. Season chicken with salt and pepper.
  3. Add chicken, sauté 6 minutes on each side or until no longer pink; remove chicken from pan.
  4. Sauté onion in the same pan when they are slighlty translucent add agave and turn off heat.
  5. Pour agave and onion mixture over chicken.
  6. Serve over black beans.
