Adobo Shrimp and Asparagus Alfredo with Penne

Ingredients
- 1 1/2 tsp Adobo seasoning, plus more as needed
- 1/3 cup Deli shredded Parmesan cheese, grated
- 16 oz Penne rigate
- 9 oz Creamy Parmesan Italian Cooking Sauce
- 6 oz Asparagus, cut into thirds
- 2 tbsp Extra virgin olive oil
- 1 1/2 lb Argent argentinian lot shrimp, thawed
- 1/3 cup Pecorino Romano cheese, as needed for garnish
Instructions
- Place shrimp in a bowl and toss with adobo seasoning. Set aside to marinate while making pasta.
- Bring a large pot of water to a boil. Add a big pinch of salt and pasta and cook according to package directions. Drain and set aside.
- Set a large non-stick pan over medium-high heat and add oil and asparagus. Cook 2 to 3 minutes.
- Add creamy Parmesan cooking sauce then add seasoned shrimp, toss and continue cooking until shrimp are fully cooked, approximately 5 to 7 minutes.
- Add cooked pasta and cheeses, toss with shrimp mixture and cook an additional 2 to 3 minutes to just melt cheese. Season to taste with more adobo seasoning.
- Transfer to a serving dish, garnish with more cheese and fresh parsley if desired.
