Adobo Cornbread Madeleines made with Gluten Free Flour

Ingredients
- 1 cup Almond flour
- 1 cup White corn meal
- 1 tbsp Baking powder
- 1/2 cup Half & half
- 4 oz Salted butter
- 3 oz Sharp white cheddar, very finely shredded
- 1 tsp Adobo seasoning
- 1 Large brown eggs
- 1/2 tsp Salt
Instructions
- In a large bowl, combine almond flour, corn meal, baking powder, salt and adobo seasoning. Whisk together.
- Add butter, egg, half & half and cheese. Mix together thoroughly.
- Spoon into cups of a non-stick madeleine pan. Spread out into a single layer, pushing gently into cups.
- Bake 7 to 10 minutes, or until lightly browned on top.
- Chef's Note: This recipe also makes 1 large loaf or 12 muffins. Increase cooking time to 15 to 20 minutes or until muffins are brown on top and thoroughly cooked.
