Adobo Cornbread Madeleines made with Gluten Free Flour

Serves 10

Ingredients

  • 1 cup Almond flour
  • 1 cup White corn meal
  • 1 tbsp Baking powder
  • 1/2 cup Half & half
  • 4 oz Salted butter
  • 3 oz Sharp white cheddar, very finely shredded
  • 1 tsp Adobo seasoning
  • 1 Large brown eggs
  • 1/2 tsp Salt

Instructions

  1. In a large bowl, combine almond flour, corn meal, baking powder, salt and adobo seasoning. Whisk together.
  2. Add butter, egg, half & half and cheese. Mix together thoroughly.
  3. Spoon into cups of a non-stick madeleine pan. Spread out into a single layer, pushing gently into cups.
  4. Bake 7 to 10 minutes, or until lightly browned on top.
  5. Chef's Note: This recipe also makes 1 large loaf or 12 muffins. Increase cooking time to 15 to 20 minutes or until muffins are brown on top and thoroughly cooked.
