Instructions

  1. Heat a medium cast iron pan over high heat. Add onion and garlic and char all sides. Remove from pan and place in a blender.
  2. Add guajillo chili to the pan and toast until slightly puffed. Remove stem and seeds. Add pepper to 1 cup of hot water and soak for 5 to 7 minutes.
  3. After soaking, add guajillo pepper and water to the blender along with achiote paste, lime zest and juice, orange pepper seasoning, and oil. Blend until smooth.
  4. Pour marinade over steak and marinate in the refrigerator for at least 1 hour or up to 4 hours.
  5. Preheat grill to medium-high heat. Remove steak from marinade and shake off excess.
  6. Grill steak until internal temperature reaches 140ºF, about 7 minutes, flipping halfway through.
