Achiote Grilled Sirloin Fajita

Ingredients
- 1/2 Medium yellow onion
- 4 Peeled garlic cloves
- 1 Guajillo pepper
- 1.2 oz Achiote Rojo Spiced Seasoning Paste
- 1 Lime, zested and juiced
- 2 tsp H‑E‑B Mi Tienda Orange Pepper Seasoning
- 1 tbsp Grapeseed oil
- 2 lb Wagyu Sirloin Fajita
Instructions
- Heat a medium cast iron pan over high heat. Add onion and garlic and char all sides. Remove from pan and place in a blender.
- Add guajillo chili to the pan and toast until slightly puffed. Remove stem and seeds. Add pepper to 1 cup of hot water and soak for 5 to 7 minutes.
- After soaking, add guajillo pepper and water to the blender along with achiote paste, lime zest and juice, orange pepper seasoning, and oil. Blend until smooth.
- Pour marinade over steak and marinate in the refrigerator for at least 1 hour or up to 4 hours.
- Preheat grill to medium-high heat. Remove steak from marinade and shake off excess.
- Grill steak until internal temperature reaches 140ºF, about 7 minutes, flipping halfway through.
