Achiote Chicken Soup

Ingredients
- 1 1/2 lb Boneless skinless extra thin sliced chicken breast
- 1 tbsp Achiote seasoning
- 6 cups Chicken stock
- 1 cup Fresh green onion, chopped
- 2 Bay leaves
- 1 1/2 cups Carrots, peeled and roughly chopped
- 2 Medium fresh jalapeño pepper, seeded and thinly sliced
- 1 cup Celery, chopped
- 1/2 cup Fresh cilantro, chopped
- 1/4 cup Lime, juice
Instructions
- Season chicken breasts with achiote seasoning on both sides and refrigerate 30 minutes to 1 hour.
- In a large soup pot, add seasoned chicken, chicken stock, green onions, bay leaves, carrots, jalapeños and celery.
- Bring everything to a simmer and cook 45 minutes to 1 hour. Skim off any foam that floats to the top while cooking.
- Once chicken is fully cooked, remove and shred with a knife and fork.
- Lower heat and add shredded chicken back to the pot. Stir in cilantro and lime juice. Continue to cook an additional 10 to 15 minutes.
- Serve with shredded cabbage and rice if desired.
- Season to taste with more achiote seasoning.
