Unsaved 30 Minute Shepherd's Pie

Ingredients

  • 1 lb 85/15 ground beef
  • 1 tbsp Extra virgin olive oil
  • 24 oz Mashed potatoes
  • 29.5 oz Mixed vegetables, drained
  • 9 oz Pot roast cooking sauce
  • 1 cup Shredded mild cheddar cheese

Instructions

  1. Place pan back on heat and add mixed vegetables and pot roast sauce. Stir to combine and heat through, 1 to 2 minutes. Season to taste with salt and pepper. Pour into 9"x13" pan evenly.
  2. Preheat oven to 350°F and spray a 9"x13" or large cast iron pan baking dish with non-stick spray. Heat a large skillet over medium high heat and when hot add oil and ground beef. Break apart with a spatula or spoon and cook until no pink remains. Drain grease carefully and discard.
  3. Using a spoon or spatula spread Simply mashed potatoes evenly over the top and top with cheddar cheese. Place in oven and cook for 20 minutes until cheese is melted and potatoes begin to brown in spots.
