Unsaved 30 Minute Green Chile Chicken Casserole

Ingredients

  • 4 cups Green chili stew
  • 16 oz Fully cooked, seasoned, shredded chicken
  • 4 cups Tortilla chips, crushed
  • 2 cups Mexican blend shredded cheese, divided use
  • 1 cup Fresh, mild pico de gallo

Instructions

  1. Preheat oven to 400ºF.
  2. Combine green chile stew, chicken, chips and 1 cup of cheese in a large bowl and pour into a 9x13-inch casserole dish.
  3. Top with remaining cheese and pico de gallo and bake for 20 minutes or until cheese is browned and melted.
  4. Let cool for 5 minutes before serving.
  5. Chef's Note: This pairs great with cornbread and a salad.
