30 Minute Green Chile Chicken Casserole

Ingredients
- 4 cups Green chili stew
- 16 oz Fully cooked, seasoned, shredded chicken
- 4 cups Tortilla chips, crushed
- 2 cups Mexican blend shredded cheese, divided use
- 1 cup Fresh, mild pico de gallo
Instructions
- Preheat oven to 400ºF.
- Combine green chile stew, chicken, chips and 1 cup of cheese in a large bowl and pour into a 9x13-inch casserole dish.
- Top with remaining cheese and pico de gallo and bake for 20 minutes or until cheese is browned and melted.
- Let cool for 5 minutes before serving.
- Chef's Note: This pairs great with cornbread and a salad.
