20 Minute Potato Soup

Ingredients

  • 4 Bacon
  • 1/4 cup Garlic cloves, minced
  • 3 cups Heavy whipping cream
  • 2 tbsp Fresh green onions, chopped
  • 1 cup Restaurant style 50/50 blend cheese
  • 1 lb Frozen baby homestyle potatoes
  • 1 Fresh yellow onion, chopped
  • 2 cups Whole milk

Instructions

  1. Preheat oven to 375ºF.
  2. Place bacon on a sheet pan and bake 7 minutes.
  3. Meanwhile, microwave potatoes 4 minutes then place bacon and potatoes in a food processor and pulse for 1 minute.
  4. Place a medium stock pot over high heat. Add onions and garlic and cook 2 minutes.
  5. Add milk and heavy cream and reduce heat to a simmer for 2 to 3 minutes. Add potato mixture and cook until heated through.
  6. Top with green onions and cheese.
