20 Minute Potato Soup

Ingredients
- 4 Bacon
- 1/4 cup Garlic cloves, minced
- 3 cups Heavy whipping cream
- 2 tbsp Fresh green onions, chopped
- 1 cup Restaurant style 50/50 blend cheese
- 1 lb Frozen baby homestyle potatoes
- 1 Fresh yellow onion, chopped
- 2 cups Whole milk
Instructions
- Preheat oven to 375ºF.
- Place bacon on a sheet pan and bake 7 minutes.
- Meanwhile, microwave potatoes 4 minutes then place bacon and potatoes in a food processor and pulse for 1 minute.
- Place a medium stock pot over high heat. Add onions and garlic and cook 2 minutes.
- Add milk and heavy cream and reduce heat to a simmer for 2 to 3 minutes. Add potato mixture and cook until heated through.
- Top with green onions and cheese.
