Lychee Simple Syrup

Ingredients

  • 15 Lychees, peeled and seeded
  • 1/2 cup Water
  • 1/2 cup Granulated sugar
  • 1 Lemon, juiced and zested

Instructions

  1. Place peeled and seeded lychees in the blender and puree until smooth. Transfer to a small saucepan.
  2. Add water and sugar and stir to mix. Bring to a boil over medium-high heat, reduce heat to low and allow to simmer until reduced by half.
  3. Pour into a reusable container and let cool before use. Cover and store in the refrigerator for up to 1 week.
