Lychee Simple Syrup

Ingredients
- 15 Lychees, peeled and seeded
- 1/2 cup Water
- 1/2 cup Granulated sugar
- 1 Lemon, juiced and zested
Instructions
- Place peeled and seeded lychees in the blender and puree until smooth. Transfer to a small saucepan.
- Add water and sugar and stir to mix. Bring to a boil over medium-high heat, reduce heat to low and allow to simmer until reduced by half.
- Pour into a reusable container and let cool before use. Cover and store in the refrigerator for up to 1 week.
