  • You Will Need: 2 large eggs; 3 tablespoons milk; 1-1/2 cups mashed over-ripe bananas (Approx. 4 medium); 1/3 cup vegetable oil; 1/2 cup chopped walnuts and/or chocolate chips (optional). Milk can be replaced with any non-dairy alternative. 1. Heat oven to 350 degrees F. Grease the bottom and sides of an 8 inch or 9 inch loaf pan. 2. In a large bowl, beat banana bread mix, oil, milk, eggs and mashed bananas, until thoroughly combined. If desired, stir in 1/2 cup chocolate chips and/or chopped nuts. Pour into pan. 3. Bake 50-60 min., or until toothpick inserted into center comes out clean. Cool 10 minutes in pan, then remove and cool completely on wire rack before serving.
