  • You'll Need: 2 lbs boneless skinless chicken (breast or thigh) cut into 1/2 inch cubes; 1 tbsp vegetable or olive oil; 1 - 14.5 oz can diced tomatoes; 2 cups water. 1. Brown chicken in vegetable or olive oil. 2. Add the following and stir. 1 - 14.5 oz can of diced tomatoes; 2 cups water; seasoning packets, except packet labeled cayenne pepper. For hot chili stir in the entire cayenne pepper packet. For medium chili add 1/2 the cayenne pepper packet. For mild chili omit cayenne pepper packet. 3. Bring to a boil. Reduce heat and simmer covered for 15 minutes. 4. Uncover and continue to simmer for an additional 10 minutes or until chili has a thicker consistency. Make it your own by adding one or more of the following: Substitute beef or pork for chicken; Chopped onion or green peppers when browning meat; 1 - 15 oz can of kidney or pinto beans; Serve over tortilla chips and top with shredded Monterey Jack cheese. Makes: 6 - 8 oz servings.
