Description
Rogue Ale's chocolate stout beer, Alderwood smoked salt, burnt sugar caramel, dark chocolate. 70% cacao. One of my favorite breweries, Rogue Ales, crafts a Double Chocolate Stout that is such a fine beauty that I was compelled to use it in this bar. The luscious brew pours an opaque chocolate brown, nearly obsidian, with a fine-bubbled, saddle-colored head dressed in a plethora of lacing. The rich, chocolaty aroma is a touch sweet and tantalizes with coffee undertones and parfums of smoke, molasses, toffee, hops and licorice. This stout is accented with smoked salt and cream caramel creating an intoxicating trio. Peace, love, and chocolate. - Katrina. After graduating from Vanderbilt University, Katrina attended Le Cordon Bleu in Paris and then furthered her food studies through extensive world travel. Beginning in Spain and working with the great Adria brothers of El Bulli, she continued traveling east studying the indigenous cuisines of Vietnam, Korea, Japan, Thailand, China and Australia. Upon her return, Katrina founded Vosges Haut-Chocolat with the concept of Travel the World through Chocolate. Her mission is to create a sustainable, luxury chocolate experience while bringing about awareness of indigenous cultures through the exploration of spices, herbs, roots, flowers, fruits, nuts and the obscure. Take three deep ujjayi breaths, quiet the chattering mind and be in the present moment. Smell: Rub your thumb on the chocolate bar's surface to help release the chestnut wood aromas and inhale deeply. Do you sense the chocolate and licorice noted stout in smoked cream? Snap: Break the bar in two pieces. Listen to the soft break, exposing the chocolate bar's molten caramel interior.
