Keep Refrigerated- Heat charcoal for 30 minutes or gas grill for 10 minutes with the lid closed. Season or marinate as desired. Grill 4" above medium heat. Hold palm just above grate. If heat causes you to pull away in 4 seconds, heat is ideal (375 degrees F). For a 3/4'' steak, cook for 4-5 min/side; for a 1" steak, cook for 5-6 min/side for medium-rare or medium doneness.
