If using paper liners, let cool completely before eating to prevent muffins from sticking to the paper. Loaf: Makes one 8x4 inch loaf: 3 eggs; 1/2 cup water; 1/4 cup oil. Heat oven to 325 degrees F. Sprinkle unsalted pumpkin seeds & chopped pecans on each muffin or loaf before baking. Drizzle melted dark chocolate after baking. For extra moist muffins, replace water with plain unsweetened kefir.
