Ingredients
Orange Roughy Fillets.- To Thaw: For best results, thaw orange roughy in a covered pan in the refrigerator. The fish should thaw in 4-6 hours. For quicker thawing, place fish in an airtight bag or its original packaging and submerge in a pan of cold water. Quick thawing can also be done in the microwave according to the manufacturer's instructions. Do not thaw fish at room temperature. Do not refreeze. To Bake: Preheat oven to 425 degrees F. Place thawed orange roughy in pan, brush with melted butter or margarine and sprinkle with your favorite seasonings. Bake approximately 9-11 minutes, or until fish flakes easily when tested with a fork. To Sauti: In medium skillet, heat approximately two tablespoons vegetable oil or butter over medium-high heat. Season orange roughy with salt, pepper and garlic powder and place in hot skillet. Cook approximately 1-3 minutes on each side or until fish flakes easily when tested with a fork. For added flavor, sprinkle orange roughy with lemon juice after turning. To Microwave: Place thawed orange roughy in a microwave-safe dish. Brush with melted butter or margarine and sprinkle with your favorite seasonings. Cover dish with plastic wrap and vent to allow steam to escape. Microwave on medium power for 2-3 minutes, or until fish flakes easily when tested with a fork. Do not overcook. Serving Suggestions: Baste thawed orange roughy with melted butter or margarine. Season with 1/2 teaspoon salt and 1/4 teaspoon garlic powder. Combine 1/4 cup Italian-seasoned bread crumbs with 1/4 cup Parmesan cheese. Coat orange roughy fillets with bread crumb mixture and place on a foil-lined baking sheet. Bake approximately 10-12 minutes or until fish flakes easily when tested with a fork. Sauti orange roughy with butter and lemon for approximately 2-4 minutes on each side or until fish flakes easily when tested with a fork. Top with fruit salsa made from chopped fruit, such as nectarines, peaches, oranges and pears.
