Keep Refrigerated.- Season, then baste or marinate for 30 min to 2 hours in the refrigerator. Heat charcoal 30 mins until ash covered or gas grill for 10 mins with lid closed. Grill 4" above medium heat (375 degree surface temperature is ideal). Cook for 6-9 min/side. Let stand for 5 minutes covered with foil. Slice thinly across the grain.
