Ingredients
Kosher Salt, Pepper, Rosemary, Garlic and Other Natural Herbs and Spices.- Prep Time: 3 mins. Cook Time: 14-17 mins. per lb. Step 1: Select the grade and size of your prime rib roast. If possible. have your butcher cut and tie the ribs. One package covers 15-17 lbs of prime rib. For roasts less than 5 lbs only use a portion of the seasoning or roast will be too salty! Step 2: 30 Minutes Prior To Cooking, Remove the roast from the refrigerator and place in roasting pan. Pour seasoning in small bowl and stir well. Surround entire roast with seasoning. Pat or rub on. If seasoning falls off, Scoop it up and PAT it back on the roast until entire roast is covered. For a nice crust place a little extra seasoning on top (fatty side). Place roast fatty side up, ribs down. Cover and set aside for 30 min. Step 3: Preheat oven to 325 degrees F. Place roast uncovered in roasting pan on center rack. Cook approximately 14 -17 min. per pound for rare. Using a meat thermometer. Check center of roast for desired doneness. End cuts will be more done than center. Let roast rest, (under a loose covering of aluminum foil,) between 15 and 30 minutes after you remove it from the oven. This allows the juices to seep in and the flavors to continue to blend. Roast can gain as much as 20 degrees while resting.
