What You Need: 1-1/2 cups long-grain white rice, uncooked; 1-1/2 lb boneless skinless chicken breasts, cut into bite-size pieces; 1 red pepper, coarsely chopped; 1 small red onion, coarsely chopped; 1 can (8 oz) pineapple chunks, drained. Step 2: Meanwhile - stir-fry chicken in half the Simmer Sauce in large skillet until done (Minimum internal temperature for chicken 165 degrees F.). Step 3: Add vegetables and remaining Simmer Sauce to skillet; cook and stir 2 to 4 minutes or until vegetables are crisp-tender. Step 4: Stir in Finishing Sauce and pineapple; stir-fry 1 to 2 minutes or until heated through. Serve over rice. Tip: Omit fresh chicken. Use all the simmer sauce to cook vegetables. Stir in 1 lb cooked breaded chicken tenders. Refrigerate unused portion. Shake well.
