What You Need: 1-1/2 cups long-grain white rice, uncooked; 1-1/2 lb boneless skinless chicken breasts, cut into bite-size pieces; 1 red pepper, coarsely chopped; 1 small red onion, coarsely chopped; 1 can (8 oz) pineapple chunks, drained. What's Included: Sesame Ginger Simmer Sauce; Sweet & Sour Pineapple Finishing Sauce. Step 1: Cook rice as directed on package, omitting salt. Step 2: Meanwhile - stir-fry chicken in half the Simmer Sauce in large skillet until done (Minimum internal temperature for chicken 165 degrees F.). Step 3: Add vegetables and remaining Simmer Sauce to skillet; cook and stir 2 to 4 minutes or until vegetables are crisp-tender.
