  • Blueberry Muffin Recipe You Will Need: 1 box Hill Country Fare® Wild Blueberry Muffin and Quick Bread Mix (16.9 OZ), ¾ Cup Water, ¼ Cup Vegetable Oil, 2 Eggs. 1. PREHEAT oven to 425ºF (or 400° for dark or nonstick pans). Line muffin pan with paper baking cups or lightly grease bottom of muffin pan with cooking spray or shortening. Drain blueberries, rinse in cold water and set aside. 2. COMBINE muffin mix, ¾ cup water, ¼ cup vegetable oil, and 2 eggs in medium bowl just until blended (batter may be lumpy). Gently add and fold in blueberries. Pour batter into muffin cups (fill about 1/2 full.) Place muffin pan on center rack of oven. 3. BAKE as indicated below or until golden brown and toothpick inserted in the center comes out clean. Cool for 5 minutes; carefully remove from pan (if muffins are not in paper baking cups, run knife around sides before removing). Cool completely before storing. MAKES TEMPERATURE BAKE TIME 36 Mini Muffins 425°F 11-13 minutes 12 Standard Muffins 425°F 15-20 minutes Quick Bread Recipe You Will Need: 1 box Hill Country Fare® Wild Blueberry Muffin and Quick Bread Mix (16.9 OZ) ¾ cup water 1 egg 3 tbsp vegetable oil Instructions: 1. PREHEAT oven to 400ºF. Grease a 9x5 loaf pan. DRAIN blueberries; rinse and set aside. 2. COMBINE mix, water, egg, and oil in medium bowl. Stir until blended (batter will be slightly lumpy).* 3. FOLD in blueberries carefully. Pour batter into pan. 4. BAKE 28 - 33 minutes. Ensure top is golden brown and toothpick inserted in the center comes out clean. 5. COOL for 10 minutes; remove from pan. Serve warm. *Tip: To make Blueberry & Banana Nut Bread, add the following ingredients after Step 3: 1 mashed banana, ½ cup pecan pieces, ⅓ cup sliced almonds, ⅓ cup unsweetened coconut flakes. Blend well into mix. Continue with Step 4-6, adjusting bake time in Step 5 to 42-48 minutes.
