  • Grill: Heat charcoal grill for 30 minutes or a gas grill for 10 minutes with the lid closed. Clean and oil grate well. Brush fillet meat and skin lightly with oil. Season with mild herbs or spices if desired. Grill 4" above medium heat (375°F surface temperature is ideal). Place fillet on grill with the meat side down and cook 4 - 5 minutes. Flip fillet and cook another 4 - 5 minutes until fish is opaque/white in the center and reaches 145°F internal temperature.
