Keep Refrigerated- Heat charcoal for 30 minutes until ash covered or gas grill for 10 minutes with lid closed. Season or marinade as desired. Grill 4" above Medium heat. Hold palm just above grate. If heat causes you to pull away in 4 seconds, heat is ideal (375 deg F). For 3/4'' chops, cook 4-5 min/side. For 1" chops, cook 7-9 min/side on Medium. Remove when 150 degrees F internal temperature.
