  • Chocolate Pecan Pie

    Prep Time: 20 minutes / Cook Time: 1 hour
    Serves: 8

    1 pie crust (9 inch)
    1 cup light brown sugar, firmly packed
    ⅔ cup light corn syrup
    4 eggs
    1 ½ tsp vanilla
    ½ tsp salt
    2 Tbsp unsalted butter
    ½ cup semi-sweet chocolate chips
    1 ½ cups pecan halves
    Whipped cream or vanilla ice cream (optional)

    Bake pie crust as instructed. Set aside. Preheat oven to 350°F. Combine brown sugar, corn syrup, eggs, vanilla and salt in a large mixing bowl and mix until blended. Combine butter and chocolate chips in a large microwave-safe bowl and microwave for 30 seconds. If not completely melted, continue to microwave for 15 second intervals until smooth. Stir thoroughly after each interval. Stir egg mixture into the melted chocolate. Add pecans, then pour into the baked pie crust. Place pie in oven and bake 40 - 50 minutes until a knife inserted in center comes out clean. Allow to cool. Cut pie into 8 slices and serve.
