Wash working surfaces (including cutting boards), utensils, and hands after touching raw meat or poultry. Cook thoroughly. Keep hot foods hot. Refrigerate leftovers immediately or discard.
  • Heat oven to 350°F. Rub roast with oil and season on all sides. Place fat side up on a rack in a shallow roasting pan. Roast, uncovered, 35 - 45 minutes per pound (allow more time per pound to cook smaller roasts). Remove when 150°F internal temperature is reached. (Pork should be a light pink blush color in the center.) Let stand 15 minutes before carving.
