    Keep refrigerated. Caution: Contains bones.
  • Oven: Heat oven to 325°F. Season roast, then place fat side up on a rack in a shallow roasting pan. Cook uncovered in center of the oven for 25 - 30 minutes per pound. Remove when a meat thermometer inserted in the center (not touching bone or fat) reads 160°F internal temperature. Let stand 15 minutes before carving. Other Options: Braise or smoke.
