Keep Refrigerated.- Grill Method: 1. Preheat grill to medium-high heat. 2. Remove belly from package and season as desired. 3. With a knife, cross-hatch fat side of belly with cuts that are ¼" to ½" deep, spaced about 1" apart. 4. Place seasoned belly on hot side of grill to apply grill marks to both sides of belly; approximately 6 to 8 minutes per side. 5. Move belly to coolest side of grill and do not allow any direct heat immediately under the belly. 6. Cook for at least 2 hours and occasionally flip end to end to expose both sides to heat. Maintain internal grill temperature between 350-400°F. 7. For an extra tender belly, cook for at least 3 hours. Internal temperature should read 185°F for optimal tenderness. 8. Remove from grill. Allow to rest 5 to 10 minutes, then slice and serve. Oven Method: 1. Preheat oven to 360°F. 2. Line a large baking sheet with foil and place a baking rack on top of the baking sheet. 3. Remove belly from package and season as desired. 4. With a knife, cross-hatch fat side of belly with cuts that are ¼" to ½" deep, spaced about 1" apart. 5. Place seasoned belly on baking rack fat side up. Add ¼" to ½" water to bottom of baking sheet. Note: If belly is bigger than baking sheet, cut belly in half and use two baking sheets. 6. Place in oven and cook for at least 2 hours. 7. For an extra tender belly, place a sheet of foil on top of belly and cook for an additional hour. Internal temperature should read 185°F for optimal tenderness. 8. Remove from oven. Allow to rest 5 to 10 minutes, then slice and serve.
