For your protection, follow these safe handling instructions. Keep raw meat and poultry separate from other foods. Wash working surfaces (including cutting boards), utensils, and hands after touching raw meat or poultry. Keep hot foods hot. Refrigerate left overs immediately or discard. Keep Refrigerated- Roast: Preheat oven to 400°F. On the stove, pan sear steaks to brown, about 4 minutes per side on high heat. Transfer to a baking sheet. Cook for 25 minutes, turning halfway. Remove from oven and let rest 15 minutes prior to carving. Carve against the grain for optimal tenderness.
Grill: Prepare grill (charcoal or gas) according to manufacturer's directions for medium heat. Sear both sides of steaks over moderate direct heat until meat is browned; careful not to ignite fat. Move steaks to indirect heat. Cover and cook steaks for 10 minutes or until desired degree of doneness is achieved. Remove from grill and let rest for 15 minutes prior to carving.
