  • Grill: Preheat grill to medium-high heat. Remove pork belly from package and season as desired. With a knife, cross-hatch the fatty side of belly with cuts that are ¼" - ½" deep, spaced about 1" apart. Place seasoned belly on the hot side of grill. Cook for approximately 6 - 8 minutes per side. Move belly to the coolest side of grill and do not allow any direct heat immediately under the belly. Cook for at least 2 hours and occasionally flip end to end to expose both sides to heat. Maintain internal grill temperature between 350°F - 400°F. For an extra tender pork belly, cook for at least 3 hours. Internal temperature should read 185°F for optimal tenderness. Remove from grill. Allow to rest 5 - 10 minutes, then slice and serve.
