  • Oven: Heat oven to 325°F. Season surface of the roast. Place fat side up on a rack in a shallow pan. Roast uncovered in the center of oven 30 - 37 minutes per pound. Remove when a meat thermometer inserted in the center and not touching the bone or fat reads 160°F internal temperature. Let stand for 15 minutes before carving.
