  • Grill: Heat charcoal for 30 minutes or until ash-covered or a gas grill for 10 minutes with lid closed. Clean and oil grate well. Grill skirt steak about 4 inches above medium heat (ideal heat is 375°F). Cook for 20 - 25 minutes, depending on thickness of meat, turning halfway through total cook time, until an internal temperature of 160°F. To serve, slice the meat thinly across the grain.

    Stovetop: Cut skirt steak across the grain into ½" slices. Heat a heavy, large skillet over high heat for 3 minutes. Add 1 Tbsp oil to the pan, tipping to coat. Cook steak 1 lb at a time to prevent crowding. Cook for 7 - 8 minutes, stirring frequently until meat is no longer pink.
