Ingredients

Shake well before using. Refrigerate after opening.- Pour enchilada sauce into a saucepan. Warm over medium heat and use in your favorite enchilada recipe.
Cheese & Chicken Enchiladas
Makes 4 servings
16 oz H-E-B Mi Tienda Salsa Verde Para Enchiladas
12 oz cooked chicken, cooled and shredded
12 white corn tortillas, warmed and softened
1/2 cup diced white onion
1-1/4 Tbsp cilantro, finely chopped
8 oz Queso Quesadilla or Monterey Jack cheese, shredded
Mexican Crema for topping (optional)
Preheat oven to 350°F. Spray a 9x13 pan with nonstick spray. Pour half of enchilada sauce in bottom of pan and spread to coat bottom. In a large bowl, combine chicken, 1 Tbsp cilantro and 1/4 cup onion and stir to combine. Place 2 - 3 Tbsp chicken mixture down the center of each tortilla and roll up tightly. Place seam side down in pan. Repeat with remaining tortillas. Pour remaining enchilada sauce on top of rolled tortillas and spread to coat. Top with cheese and bake uncovered for 30 minutes. Sprinkle with remaining onion and cilantro, then drizzle with crema before serving.
