  • Lemon Meringue Marshmallow Bars

    Ingredients:
    8 cups Kix-type cereal
    1.41 oz vanilla flavored meringues, roughly crushed
    1 package H-E-B Lemon Creme Snack Mix, gently crushed
    4 oz unsalted butter
    16 oz large marshmallows
    1/4 tsp kosher or sea salt
    1 tsp vanilla extract

    Instructions:
    1. In a large bowl, combine cereal, crushed meringue pieces and crushed Lemon Creme Snack Mix and set aside.
    2. Set a medium-sized, non-stick pot over low-medium heat. Add butter and allow to melt before adding marshmallows, salt and vanilla extract - stirring until marshmallows mixture is melted and no lumps remain.
    3. Turn off heat and pour melted marshmallows evenly over cereal mix and toss to coat. Work quickly with marshmallow as it will become more difficult to mix.
    4. Once thoroughly mixed, pour mixture onto a sheet pan and spread out in an even layer. Allow to cool for at least 2 hours before serving.

    Chef Tip: Lay a piece of parchment paper over treats and using another sheet, pan press down so treats can flatten evenly.
