Keep Refrigerated.- Allow 1/2 lb uncooked per serving. Heat oven to 325 degrees F. Season as desired. Place bone side down on a rack in a shallow pan & cover tightly with foil. Roast 1-1 1/2 hours. Remove foil & roast for an additional hour uncovered. Let stand 10 minutes before carving between the bones.
