Keep Refrigerated- Place in a large stockpot. Cover with water & add onion, garlic, and seasoning as desired. Bring water to a boil. Reduce heat to Medium-Low & cover. Simmer 3-4 hrs to desired tenderness. OPTION: Remove skin & bones then return meat to soup stock. OPTION: Add green beans, cabbage, or other vegetables during the last 20 minutes.
