  • Prep Time: 10 minutes Oven Time: 12 - 14 minutes Grill Time: 12 - 15 minutes
    Ingredients:
    2 tsp extra virgin olive oil
    1/4 tsp salt
    1/4 tsp pepper
    Optional: Additional seasoning to taste

    Preparation:
    Place vegetables in an extra-large plastic zipper bag. Add oil and seasoning to the bag. Seal and shake to coat vegetables evenly.

    Oven: Preheat oven to 400°F. Using the prepared vegetables, spread out in a single layer on a greased baking sheet. Cook for about 12 - 14 minutes, stirring halfway, or until desired doneness is achieved. Carefully remove from oven and let cool slightly.

    Grill: Preheat grill to medium-high heat (about 400°F). Form a vegetable grilling packet by placing the prepared vegetables between two sheets of foil. Fold the top and bottom sheets together to seal edges. Grill for about 12 - 15 minutes, flipping halfway, or until desired doneness is achieved. Carefully remove from the grill and let cool slightly.
