    Keep refrigerated or frozen. Thaw in refrigerator or microwave. Keep raw meat separate from other foods. Wash working surfaces (including cutting boards), utensils and hands after touching raw meat. Cook thoroughly. Keep hot foods hot. Refrigerate leftovers immediately or discard them.
  • Grill: Heat charcoal for 40 minutes until ash-covered or one side of a gas grill for 10 minutes with the lid closed. Bank coals in one half of the grill or reduce gas heat to low. Place meat on the cool side. Close lid and cook for 75 minutes. Turn after 45 minutes. Add coals to keep chamber air temp at 300°F. Baste with sauce in last the 20 minutes of cooking.
