Keep Refrigerated.- Place oxtails in a large stockpot. Cover with cold water. Bring to a boil. Skim gray foam from the top until broth is clear. Add seasonings. Simmer, covered, over low heat for 4 to 5 hours until tender or when the meat falls from bones. Skim the fat from the top. If desired for soup, add chopped vegetables in the last hour. OPTION: Braise
