  • Heat oven to 325 degrees F. Rub roast with oil and season as desired. Place on a rack in a shallow roasting pan roast, uncovered in the center of the oven. Cook for 1-1 1/4 hours. Remove when a meat thermometer inserted in the center reads 140 degrees F. Let stand 15 minutes before carving.
