  • Baked Potato Soup

    Prep Time: 10 minutes
    Cook Time: 20 minutes

    1 Baked Potato Soup kit
    5 Tbsp butter
    2 cups milk
    1 cup water

    Preheat a large soup pot over medium-low heat with 5 Tbsp butter. Prep the potatoes by cutting them into small cubes. If desired, peel the potato skins prior to cutting. Set aside the green onions, 2 Tbsp bacon and ½ cup shredded cheddar cheese for garnishing. Once butter has melted, add in the remaining bacon, diced celery and onions and cook for about 2 – 3 minutes. Next, add the potato cubes to the pot and cook for an additional 5 minutes. Reduce heat to low and add 1 cup water, 2 cups milk and the seasoning packet to the pot and stir until seasoning is well combined with the liquid. Cook soup for about 5 – 10 minutes, using caution to ensure the soup does not boil or the milk may curdle. While the soup is cooking, use a potato masher to gently mash the potato pieces to your desired soup consistency. Add in the remaining cheddar cheese and stir to combine. Let soup cook for about 2 minutes, or until soup thickens. Garnish each bowl of soup with green onions and reserved bacon and cheddar cheese. Serve and enjoy.
