Safe Handling: Perishable. Keep Refrigerated.- Allow 1/2 lb uncooked per serving. Preheat oven to 425°F. Season roast. Place bone side down on a rack in a shallow pan roast, uncovered in the center of the oven for 30 - 35 minutes. For medium-rare doneness, remove when a meat thermometer inserted in center not touching bone reads 135°F. Let stand 10 minutes before carving.
